My trouble with Lemon Chicken was redeemed by Red Wine Cookies

I made a terrible dinner.  I don’t know what my problem is but I just can’t seem to figure out Lemon Chicken.  And I love Lemon Chicken.  But this is the second time it has happened.  And I am sure it has nothing to do with the recipe itself, but just my ill fate with combining lemons and chicken.  I have been waiting all week to make this recipe of Garlic and Lemon chicken with green beans and potato.  It was basically a one pot dish, how hard can it be.
Well…..

My chicken was dry, I didn’t have enough green beans so added some broccoli (it’s green, it should work, NOT!) and they were terribly sour and bitter from the lemon, and the potatoes had hardly any taste!  Now that is one terrible dinner!  My poor family.

So to redeem myself, I made these gorgeous cookies.  Instead of drowning my sorrows in a bottle of red wine, I baked with it.

I love red wine and chocolate separately and together.  And I love cookies, all kinds.  Why wouldn’t you combine the three?!  I’ve made Chocolate Red Wine cake before which deserves a post all on its own so I won’t go into details now, so I don’t know what took me so long to make these.  Hmmm probably because I am still trying to convince the hubby that cookies are yummy.  (ya, I don’t know where I found him!, but I think after these he may be converted)

These cookies are so chocolatey.  Did I mention I love chocolate??  Mmmmm.
And they have a very distinguished red wine flavour which just complements the cookie so much.  They are super soft too.  Can’t go wrong with a cookie that just melts in your mouth.  Even my 4 year old enjoyed one ha ha.   I won’t even go into how many I enjoyed…
And the recipe doesn’t call for this, but I just couldn’t help myself but right after baking I sprinkled some heath chips on top.  Heath ruins nothing, never, no way!  Now you don’t have to do that yourself, but as you get to know me you will find I tend to like too add things to my recipes.  I love sprinkles…ok now I am just getting off topic.  I can imagine that these cookies would work well as a sandwich cookie with homemade vanilla ice cream.  And they do pair nicely with a cold glass of milk…or a glass of wine 😀

Now go make these right now and you don’t have to wait for an unsuccessful dinner for an excuse either.

Oh ya, so back to lemon chicken I still love it and I am going to conquer it.  If you have a recipe that you know is foolproof (because honestly I need it)  send it my way!  Help me!

Recipe:
Chocolate and Red Wine Cookies (adapted from fullmeasureofhappiness.com)

  • 1 stick unsalted butter
  • 3/4 C brown sugar
  • 3/4 C sugar
  • 1 egg
  • 1 t vanilla
  • 1/2 C red wine
  • 1 1/2 C flour
  • 3/4 C unsweetened cocoa powder
  • 1 t salt
  • 1 t baking soda
  • 1/2 C semi-sweet chocolate chips

Preheat the oven to 375 degrees and line two baking sheets with parchment paper or a nonstick baking mat.

Cream the butter and sugars together in a mixing bowl until light and fluffy, then mix in the egg, vanilla, and red wine.

Combine the remaining dry ingredients (flour, salt, cocoa powder, and baking soda) in a small bowl. Mix the dry into the wet ingredients.

Mix the dough until just combined, then add the chocolate chips.

Scoop small spoonfuls (I use an ice cream scoop to make the cookies) onto the baking sheets.  Leave a bit of room for them to spread, but don’t worry they don’t spread very much.  I used 2 large baking sheets.

Bake for 8 minutes, then remove and let the cookies cool right on the cookie sheets for a few minutes.  Sprinkle with heath if you so desire.
